Need Something To Do...

 With Mountains of Zucchini???

Zucchini Cake
 3 eggs
1 1/2c sugar
1t vanilla
3c flour
1t cinnamon
1t baking powder
1t baking soda
3c shredded zucchini
 Mix in order and bake at 325* for 1 hour(give or take)

Sounds wonderful. I'm rather partial to zucchini bread. And it freezes wonderfully. When I had kids at home, I'd freeze it in 2 cups quantities so I could just thaw it out and mix up a batch of bread.

Mmmmm. We usually make either zucchini bread or a rich chocolate cake from our mounds of zucchini...the ones that are too big the cows get! =)

I love zucchini bread. I'll have to make a trip to the Farmers Market and buy some zucchini and try your recipe.
